Kevin’s Carolina-Goblin Hot Sauce

A warm mustardy sauce with a bit of sweet and vinegar. (Requires a high-speed blender. If you don’t have one… this is a pretty good excuse. I use mine daily.)

My new favorite color.

Ingredients

For the Pot

  1. 1 cup of water
  2. ½ cup of apple cider vinegar
  3. ¼ cup of tomato sauce

For the Blender

  1. 4-5 cloves of garlic
  2. ½ teaspoon of salt
  3. ½ cup of shredded carrot (loosely packed)
  4. ¼ cup of stoneground mustard
  5. 4 habañero peppers (seeded and deveined)
  6. 1 red chile (seeded and deveined)

Destructions

  1. Put the pot ingredients in the pot, and the blender ingredients in the blender. Don’t turn anything on yet.
  2. Bring the pot ingredients to a boil.
  3. Pour the pot ingredients into the blender, on top of the blender ingredients.
  4. Blend on HIGH for 4 minutes.
  5. Let it cool and put it on everything. You’re done!

Kevin’s InstantPot Pot Roast/Stroganoff/Stew-Thing-Dinner

You can go a couple different directions with this recipe, depending on how long you simmer it for at the end. The longer the simmer, the saucier and less soupy it will be. It’s a matter of preference though. It’s pretty wonderful either way. Ingredients: A good-sized London broil (or any inexpensive cut of meat, really)… Continue Reading

Kevin’s Bean and Ham Soup

Kevin’s Hot Smoked Chicken and Avocado Soup

Kevin’s Diabetus-Friendly Pancakes

Before I was diagnosed with the diabetus, one of my two favorite foods in the world was pancakes. (The other was french fries. No, it is not a secret how I got the diabetus.) I had all of the breakfast places in town ranked, not by service, or by price, but by pancake. So, when… Continue Reading

Not Granddad’s Stroganoff

This recipe must begin with an apology. My dear, departed Granddad made the best stroganoff ever… until now. My poor sister will likely never forgive me for this, but I gotta be true. Sorry, Sisterita. The upside is that this recipe is super-easy to make, and pretty forgiving of substitutions, so have some fun with… Continue Reading
