Tofu Ricotta
Ingredients

- Block of extra firm tofu, pat dry, don’t press
- 2 cloves of garlic (roughly chopped)
- Zest 1 medium lemon
- 2 T lemon juice (1/2 of the lemon juice)
- 1/4c Nutritional Yeast
- 1T Miso Paste
- 1/2 teaspoon Onion Powder
- 1 tsp Salt
- Pepper
- 1.5 T Olive Oil
Instructions
Blend until creamy and taste test. Adjust seasonings if needed.
This sounded good, but it was super good! Very much like hummus. I might try this with garbanzos.
