Hummus V2

This is my current version of hummus. I like to top it with chopped cherry tomatoes and a little dressing I make from olive oil, flavored vinegar, mustard, salt, and pepper.

Ingredients

  • 3 cups of cooked garbanzo beans (chickpeas)
  • 1 clove of garlic
  • 1 tablespoon olive oil
  • 2 tablespoons of tahini
  • 1 teaspoon of lemon juice
  • 1 teaspoon of salt (or to taste)
  • 3/4 cup of liquid (water or chicken stock or liquid from canned/cooked beans)
  • 1 teaspoon of chicken powder (stock is okay if you don’t have this)

 


Instructions

  1. Put all ingredients in the blender
  2. Add enough liquid until it starts to turn (just under the top of the beans. I can use the Vitamix tamper to help the process. I like thick hummus. If you want thinner hummus, use more liquid.
  3. Blend until smooth.
